Based in Zurich, Chäs and Co sources the finest traditional AND original cheeses from cheesemakers throughout the various regions of Switzerland, influenced by neighboring countries of Germany, Italy and France. Their direct relationships with the cheesemakers ensure that cheese is sent expressly for your order, assuring freshness and age specification. The variety is enormous. In the soft realm they range from bloomy-rind cheeses dipped in Riesling-Sylvaner wine to stinky style Selun and barkbound Försterkäse. Traditional cheeses are well represented, including Le Crêt Gruyère aged to 17 months and Vacherin Fribourgeois made with an old-fashioned, undulating “crepi” rind. As with the seasons, the selection available may change, such as with their “alpage” made cheeses.
